Summer Shrimp Skewers
A zesty marinade coats shrimp - perfect for grilling! Enjoy as an appetizer or toss over salads or pasta.

Ingredients

shrimp
we used pre-cooked

tbsp
olive oil
4
tbsp
cilantro
chopped fine
3
tbsp
lime juice
2
cloves
garlic
minced
1/4
tsp
salt
1/4
tsp
pepper
we used freshly ground pepper
7-10
bamboo skewers
soaked in fresh water for 30 min
Instructions
Remove bamboo skewers from soaking bowl and set on a dry cloth or paper towel.
Mix all ingredients in a zip lock plastic bag.
Add shrimp; toss to coat.
Marinate thirty minutes or overnight.
When you are ready to grill, remove shrimp and throw away marinade and plastic bag.
Thread shrimp on skewers. Grill over medium heat for 4-5 minutes turning each skewer once.
