Doctor up a box of Zatarain’s ® for a semi-homemade jambalaya! This one pot recipe is SO easy to make for a quick & easy weeknight meal but is fancy enough to serve company during Mardi Gras.

Ingredients
1tbsolive oil
13ozandouille sausage, sliced
1/2-1onion, diced fine
2 1/2cupswater
12ozpackage Zatarain’s ® jambalaya mix
1canRotel®, drained(diced tomatoes with green chilies)
Instructions
In a large Dutch oven over medium heat, saute onion and sliced sausage until onion is tender and sausage is browned.
Add water, jambalaya mix, and drained Rotel® to the pot. Bring to rolling boil, then reduce heat to low. Cover and let simmer 20-25 minutes, or until rice is tender.
