Unroll crescent rolls, pressing seams together to make one large rectangle.
Sprinke the brown sugar in the center of the crescent roll rectangle, making a circle with the sugar. Top brown sugar circle with bacon jam. Drizzle bourbon on top of bacon jam.
Place brie wheel on top of sugar and jam.
Bring edges of crescent rolls together to meet on top of the brie. Seal all edges of crescent rolls together. Brush with egg white, if desired.
Place in a greased pie plate, and bake 14-20 minutes or until pastry is flaky and lightly browned.
Let cool in pie plate 5 -10 minutes before serving. Serve with fresh baguette slices, fresh apple slices or crackers.
