The dip is not too spicy but it certainly has a flavorful kick!This dip almost became my meal! It is THAT good. The robust combination of pepper jack cheese, cream cheese, and mozzarella blend beautifully with the jalapenos and corn. I love serving hot dips in this Lodge cast iron pan. It’s the perfect size and won’t crowd the appetizer table!What I like the most about Three Cheese Jalapeno and Bacon Corn Dip is that it is SO easy to whip up at the last minute. I had all the ingredients in my pantry and refrigerator, so there was no special trip to the store! WIN. The sturdy nature of the Fritos made scooping the hearty dip a yummy experience! I recommend using a scoop style corn or tortilla chip for the Three Cheese Jalapeno and Bacon Corn Dip. You and your family will LOVE this dip! Enjoy!

Three Cheese Jalapeno and Bacon Corn Dip
Ingredients
- 8 slices bacon cooked until crisp and crumbled
- 1 1/2 tbs good mayonnaise
- 2 11 oz cans whole kernel corn drained
- 1 4oz can jalapeno slices drained and chopped
- 8 oz cream cheese softened
- 1 cup pepper jack cheese shredded
- 1 cup mozzarella cheese shredded
- 1/4 cup fresh cilantro leaves roughly chopped (optional)
- 1/4 cup fresh Parmesan cheese (optional)
- 1 tbs bacon grease
Instructions
- Preheat oven to 400 degrees. Spray non-stick 8x8 pan with Pam or use a small cast iron skillet. Set aside.
- Cook bacon using your preferred method until crisp reserving 1 tbs bacon grease.
- Combine the corn, jalapeno, cream cheese, pepper jack cheese, mozzarella cheese, mayonnaise, salt, bacon grease, and four slices of crumbled bacon.
- Spoon into prepared pan and back for 20 minuets, stirring once during cooking time.
- Sprinkle with remaining bacon, cilantro and Parmesan.
