A robust Dr Pepper marinade brings the flavor to the skirt steak. You can make the marinade the night before; just place your skirt steak & marinade in a resealable baggie for easy game-day transport. Make sure it travels in a cold cooler! Here are step by step instructions:
I placed the other ingredients (cheese & parsley) into resealable baggies, too. I’m a no-hassle tailgater! Then, once the meat is grilled, cut it into bite size pieces with kitchen shears. Grill-gating is the BEST.

Here is why this is one of my FAVORITE game-day appetizers – it’s just so darn easy! Your fans will think you prepared for days, when in reality you were spending your time looking at your team’s practice schedule! 🙂
Your Players On The Field: Toasted crostini rounds (prepared ahead of time, of course!), shredded cheese, Dr Pepper marinated skirt steak, parsley and the quarterback of the team….Hidden Valley® Ranch Roasted Garlic dressing. Such simple ingredients. RITZ crackers and cold Dr Pepper rounded out our tailgate menu!
When your ingredients are ready for kickoff, just assemble the bites and throw ’em on the grill!

The Game Plan
Each crostini round is topped with a dollop of Hidden Valley Ranch Roasted Garlic Salad Dressing, a little cheddar cheese, Dr Pepper marinated steak, more cheese & dressing, and topped off with fresh parsley. Now, you are ready to take your team over to the grill!
Skirt Steak Crostini Bites are incredibly delicious….and are best served fresh off the grill! The garlic dressing infuses with the marinated skirt steak and sits beautifully on the buttered crostini round. It’s hard to eat just one of these! The Dr Pepper marinade is incredible…and y’all KNOW we love tailgating with Dr Pepper…remember our Dr Pepper Meatball Appetizers?!?! Dr Pepper is practically a requirement for our tailgates. 🙂
Like I mentioned earlier, I’m all about stress-free tailgates. The more I can do on the front end, the better. Getting the ingredients, for instance, needs to be a one stop shop. And, I found all the ingredients at my local Wal-Mart store…..so easy!

The Kingsford® Charcoal was located in the garden center, so that was my first stop at Wal-Mart. I grabbed the Dr Pepper, RITZ and Hidden Valley Ranch Roasted Garlic Dressing in the grocery center. This dressing. It is sooo good (I’m dipping fresh carrots in it as I write this!). The Dr Pepper marinated steak and garlic dressing are the key ingredients in Skirt Steak Crostini Bites!
While we waited to assemble our steak bites, I made RITZ Cracker appetizers: cheese, salsa, sour cream and green onions. Everyone picked up at least two as they walked by our tailgate! 🙂

Skirt Steak Crostini Bites
Ingredients
Crostini
- 1 loaf French baguette bread
- 4 tablespoons butter you can adjust this amount to your liking
- non-stick
Skirt Steak
- 1 1-1.5 pound skirt steak
- 1 cup Dr Pepper regular
- 2 cloves garlic finely chopped
- 1/2 cup vegetable oil
- 1/2 cup soy sauce
- 1/2 cup Worcestershire Sauce
- 1/8 tsp Onion powder
- 1/2 tsp sea salt
- dash fresh pepper
- juice of one lime
Skirt Steak Crostini Bites
- 1 cup Hidden Valley Ranch Roasted Garlic Dressing
- 1 cup chopped fresh parsley
- 2 cups shredded cheddar cheese
- Bacon, crumbled
- prepared and cooked skirt steak
Instructions
Crostini Toast Rounds
- Set oven to broil. Line a cookie sheet with tin foil. Spray tin foil with non-stick cooking spray.
- Slice baguette into 1/4 in slices. Spray both sides of bread slices with non-stick cooking spray and arrange on prepared cookie sheet. Pat tops of sliced bread with butter.
- Broil for 5-7 minutes or until crispy. Oven time may very; check bread closely to make sure it doesn't burn.
Skirt Steak Preparation
- Rinse skirt steak, set aside.
- In a gallon size zip top baggie or a large bowl, combine remaining ingredients. Add steak and make sure it is fully covered in the marinade. Cover and marinate 2-4 hours.
- Cook over hot coals until done to your preference.
- Remove steak from grill. Cut into bite size pieces with kitchen shears.
Skirt Steak Bites
- On top of each crostini toast round, place a small small dollop of salad dressing spreading it to the edges of the bread.
- Add a small pinch of cheddar cheese, followed by steak. Add another pinch of cheese, a dollop of dressing and top with parsley. Crostini bites can be eaten as is at this point, or placed on the grill or in a hot oven briefly to melt the cheese.
