I wanted you to have it just in time for Memorial Day Weekend.We swim pretty much year round in Florida thanks to heated pools. Growing up in Alabama, summertime officially kicked off when the neighborhood pools opened: Memorial Day Weekend! It was a really big deal. EVERYONE was there for opening weekend. In my hometown in north Alabama, families had seasonal memberships at neighborhood pools. My friends and I would head to the pool each morning on our bikes or big wheels for swim team practice. It was chilly and early and we loved it……we would go home for baloney sandwiches and then go right back to the pool. The days were long, and life was simple and good. It was the late 1970’s.Fast forward to 2016.
Going to the pool for the day now necessitates more planning. AND parental supervision! ๐
Most of us don’t live five houses down from the neighborhood pool and we certainly would never let our children ride unchaperoned on big wheels! So, we load up our SUV’s and mini vans with towels, sunscreen and enough sustenance to feed the entire cast of a WWII documentary.

Copa found a trio of Rubbermaid party plattersย and we are loving them for tailgates! They are top shelf dishwasher safe (thank you, Rubbermaid!) and stack nicely inside your cooler. Even better, the bowl in the center is removable and has a screw top lid. This makes entertaining a breeze! I made my Skinny Spinach Ranch Dip the day before and poured it into the serving bowl. It tucked neatly in my refrigerator until I was ready to place it in the serving platter. (Note: I was not compensated by Rubbermaid at all. Skinny Spinach Ranch Dip
Ingredients
- 1 ounce package ranch dip mix
- 1 16 ounce carton sour cream We used fat-free!
- 1 10 ounce package chopped, frozen spinach
- 1 tablespoon mayona We used fat-free!
Instructions
- Thaw chopped, frozen spinach according to package directions, removing all excess water.
- In a medium size bowl, mix spinach, sour cream, mayonnaise and ranch dip mix.
- Cover and refrigerate 4 hours.
