This Football Game Day Hot Corn Dip is literally so good we all resorted to double dipping at one point. It’s CRAZY good!
The Players on the Field
Canned or fresh corn, sour cream, mayo, sharp white cheddar cheese, cheddar cheese, garlic powder, and green onions for garnish.
I bet you have everything to make this dip in your pantry & fridge right now! Don’tcha just love being able to whip up drool worthy appetizers without a special trip to the store? My hand is up!
Some recipes for Hot Corn Dip that I’d tried in the past rendered a white base for the dip with kernals of corn here & there. I wanted to make a Hot Corn Dip that was not only rich & creamy, but aesthetically pleasing, too. So, bye bye other corn dips! Here’s the key:
Sideline Tip
Just before baking, separate the prepared dip into two batches. Puree one batch in a blender or food processor. Incorporate the pureed corn mixture back into the dip mixture. Voila! No more white based dip!
Rich, creamy goodness. This dip will be your Hail Mary contribution to the appetizer table!

Now, while we were shamelessly double dipping, Copa had a brilliant idea. That man. He’s so smart, my total hottie… & it turns out he’s really intuitive in the kitchen!
“Heather,” he began. “Just an idea, but what about chopping up some of that leftover bacon from breakfast and throw it on top of the dip?”
He’s BRILLIANT.
So, we chopped. Then we put as much bacon as possible on top of the dip. Here is Copa, diving in on his creation:
So as it turns out, my basic Football Game Day Hot Corn Dip is very versatile. SCORE!
Throw some jalapenos in the mixture and swap out the white cheddar for Jack cheese for a spicy dip!
Since my goal was to come up with a super basic non-spicy dip, I stopped there & just added bacon.
We just returned from taking our daughter to college. She attends a university in America’s heartland, and we passed several fields of corn stalks along the way. It was a stark contrast to the citrus grove landscapes at home! Our family loves fresh corn in the summertime. Copa’s favorite is Scott’s Zellwood Sweet Corn which is grown right here in Florida at Long & Scott Farms! Yes, we Floridians grow corn too! It’s so fresh and bursting with sweet flavor. You can toss any type of corn into this recipe. Your tiny fans will be able to enjoy this appetizer just like mom & dad! It’s not spicy at all, just hot & hearty!

Football Game Day Hot Corn Dip
Ingredients
- 1 32 ounce can corn drained
- 1 cup sour cream not fat free
- 2 cups mayonnaise low fat is ok, but not fat free
- 1 tsp garlic powder
- 1/2 cup green onions chopped, set aside 1/4 cup
- 2 cups extra sharp white cheddar cheese shredded
- 1/4 cup cheddar cheese shredded
Instructions
- Preheat oven to 350 degrees. Spray a 2 quart casserole with non-stick spray.
- In a large bowl, mix together sour cream, mayonnaise, garlic powder, extra sharp white cheddar cheese and 1/4 cup of the green onions. Stir.
- Blend corn into sour cream mixture and blend until it is incorporated.
- Separate the mixture equally. Place half of the mixture into a blender or food processor and puree. Return puree to the corn mixture, and stir well. Pour mixture into prepared casserole dish.
- Back 40-50 minutes or until hot & bubbly. In the last 5 minutes of baking, sprinkle the cheddar cheese on top. Finish cooking and remove from oven.
- Garnish with green onions. Serve with pita chips, corn dips or bread.
