Copa and I just discovered the show Homeland. I know, we are a little late the the party with this one! We love finding new shows to binge watch, and my mother recommended this one a few years ago. We. Are. Hooked. Not sure if we are #teamBrody or not…we are wrapping up the first season.
On Friday nights, I love setting out a few simple appetizers like this Cheddar Bacon Cheeseball or Buffalo Chicken Dip on the coffee table. We relax, get lost in Jess & Brody’s saga, and quietly wish we were both CIA agents. 🙂 If you have young children and love family game nights, grab the Cheddar Bacon Cheeseball to compliment the kiddo’s food!
I love taking this to casual gatherings; it is always devoured right away! And, if you are in a time crunch, this cheeseball does not require hours and hours of chilling prior to serving! Touchdown!
Take It To The Tailgate Tip
The recipe calls for rolling the cheeseball mixture into a bowl of finely chopped pecans. Next, wrap it tightly in wax paper and chill if you are not immediately serving it to guests. If you are tailgate bound, place the wax paper ball inside a zip lock baggie and place the Cheddar Bacon Cheeseball on the top of the items in the cooler. That’s it!The bacon is totally optional. Copa and I seem to add bacon (and bourbon!) to EVERYTHING, and the bacon is really good in this cheeseball! Trust me, if I can think of a way to add Bourbon AND bacon to the cheeseball, I most certainly will!

Cheddar Bacon Cheeseball
Ingredients
- 3 cups sharp cheddar cheese
- 8 ounces cream cheese
- 1/4 tsp Onion powder
- 1/2 tsp garlic powder
- 1/2 cup good mayonnaise
- 2 cups finely chopped pecans
- 2 slices fully cooked, crispy bacon optional
Instructions
- Bring cream cheese block to room temperature.
- Blend shredded cheese, cream cheese, onion powder, and mayonnaise together. Chop bacon and add to the mixture. Shape cheese mixture into a ball or log.
- Pour chopped pecans into a bowl.
- Roll cheese ball in pecans and thoroughly cover all exposed areas. Place cheese ball in wax paper and wrap tightly. Serve immediately or refrigerate until serving time.
