Only 4 ingredients! Easy enough for a weeknight meal & impressive enough for company. (I do both!) You guys….this is a jazzed-up “semi-homemade” recipe that ROCKS!
This recipe feeds 6 easily as an entree. When I served it to company as an appetizer scoop for a Mardi Gras gathering, it served 18! Want to pull together a Mardi Gras menu? Serve this Praline Popcorn with a simple charcuterie board, the Jambalaya with Zatarain’s as your entree, and OF COURSE these King Cake Bites for dessert!
We invited a few neighbors over as a “meet & greet”. Our neighborhood is new, and a Mardi Gras themed gathering seemed PERFECT right after the holidays.
Jambalaya with Zatarain’s® :
The Playbook~How to jazz it up!
- 1 onion
- 1 can Rotel® diced tomatoes & green chilis
- 1 andouille sausage
- 1 package Zatarain’s® Jambalaya
That’s it! It is amazing how an onion & Rotel® can make a box of Zatarain’s® taste like homemade Jambalaya! Your home will smell like you slaved away all day, but the reality is that this meal comes together FAST!
Now, the recipe also calls for water & olive oil, but I do not count them as one of the main 4 ingredients~
When can you serve Jambalaya with Zatarain’s® ?
- A home tailgate! Make a big pot & your fans can graze during the game!
- Mardi Gras, naturally!
- Potlucks! Everyone will want your recipe. (Here’s a cute insulated casserole carrier.)
- A weeknight meal when you have limited time & even less energy.
- Bunco – this dish is your centerpiece! Just add fresh bread & a salad.
To round out our menu, I did a cheese tray and made my sister-in-law’s Hot Baked Onion Dip and our family’s favorite Buffalo Chicken Dip. (It’s in the chafing dip to the right of the Jambalaya.) Okay, okay. You caught me! It was not a full Cajun menu, but the party was a last minute idea to meet our new neighbors, and I threw a party with pantry staples!

Jambalaya with Zatarain’s®
Ingredients
- 1 tbs olive oil
- 13 oz andouille sausage, sliced
- 1/2-1 onion, diced fine
- 2 1/2 cups water
- 12 oz package Zatarain’s ® jambalaya mix
- 1 can Rotel®, drained (diced tomatoes with green chilies)
Instructions
- In a large Dutch oven over medium heat, saute onion and sliced sausage until onion is tender and sausage is browned.
- Add water, jambalaya mix, and drained Rotel® to the pot. Bring to rolling boil, then reduce heat to low. Cover and let simmer 20-25 minutes, or until rice is tender.
