Hurricane Dorian is expected to whip through Florida over Labor Day. Central Floridians (myself included) have been going nuts with preparations the past day or so. My car was even hit in a Publix parking lot last night by an over zealous Dorian prepper!

Anyway, if the power is out for a few days we need to have a few meals ready that can be heated solely on our gas grill. We immediately thought about making pancakes!
But, not wanting to make ANOTHER run to the grocery store during hurricane craziness, Copa came up with a scratch mix that can be make ahead of time!
He suggests using a propane griddle if you are going camping or feeding your fans at a morning tailgate.
The PLAYBOOK for the Homemade Pancake Mix Recipe
- Use fresh flour and baking soda
- Double or triple this recipe so you always have pancake mix on hand.
- Make sure you store prepared pancake mix in a cool, dry place.
- If you live in coastal areas prone to hurricanes, make a few batches to store in case you lose power! The eggs & milk will stay cold in your cooler. Hurricane Dorian is heading our way, and this mix is READY! (Psst: We use this cooler for beach days AND for hurricane prep! It holds a TON of supplies and it is on wheels. DONE! )

- Flour (all purpose)
- Baking soda AND baking powder
- Salt & sugar
- 1 egg
- milk
- butter or oil
- skillet, cast iron pan or griddle

Homemade Pancake Mix Recipe
Ingredients
Dry Ingredients - Make ahead & store until you want pancakes!
- 4 cups all purpose flour
- 3 tablespoons baking powder
- 1 teaspoon salt
- 3 tablespoons sugar
- 2 teaspoons baking soda
Wet Ingredients - You will need to add these ingredients to your dry ingredients.
- 1 egg
- 1 cup milk fat free is fine - whole yields better results but is not required
- 1 tablespoon melted butter or oil
- 1 cup pancake mix
Instructions
- Mix dry ingredients together until just incorporated - do not over mix! Now, at this point you can store dry ingredients in a ziplock back and keep it in the refrigerator until you are ready to whip up pancakes! If you are ready to make pancakes....keep reading!
- In a medium bowl, add wet ingredients to dry ingredients and stir until just blended. Heat a skillet or griddle on medium heat and pour 1/3 to 1/2 cups of batter onto the griddle. Once the pancake bubbles, it is time to flip it to the to other side.
