The Playbook for Easy Soft Batch Pudding Chocolate Chip Cookies
- You will definitely need either a silicone baking mat or parchment paper. This will yield cookies with lightly brown bottoms and no burned or crispy edges.
- Make sure you mix the wet and dry ingredients separately, and that you use a mixer for the wet ingredient incorporation
- Unlike regular chocolate chip recipes, you will want to use 1/4 cup of cookie dough on the cookie sheet for each cookie.

Easy Soft Batch Pudding Chocolate Chip Cookies
Makes 48 cookies if using 1 1/2 tablespoons of cookie batter.
Ingredients
- 2 1/4 cups all purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 2 sticks butter, unsalted softened but not melted
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 3.4 ounces instant vanilla pudding mix
- 1 tsp vanilla
- 2 1/2 cups semi-sweet chocolate
- 2 eggs
Instructions
- Heat oven to 350 degrees. Cover a baking sheet with silicone baking mat or parchment paper.
- You will need two medium or large bowls - one for dry ingredients & one for wet ingredients.
- In one bowl, mix flour, baking soda and salt. Set aside.
- In the second bowl, mix the butter and sugars with a handle held or stand mixer. Mix on high speed at least 3 minutes until really light and creamy. You must use an electric mixer for this step!
- To the butter mixture, add the pudding mix, eggs, and vanilla. Beat on high for 3 minutes.
- Pour half of the dry ingredients into the wet ingredients and stir a few times. Beat with mixer on high and mix until thoroughly mixed. Add the rest of the dry ingredients and beat with mixer on high until dough is just combined. Add chocolate chips and stir until incorporated.
- Drop 1 1/2 tablespoons of cookie dough onto prepared cookie sheet. Bake 10-12 minutes until cookies are just starting to turn golden around the edges and the tops are starting to set. Allow to cool for 2 minutes on the cookie sheet, then transfer to a wired baking rack.
