- Canned pumpkin
- Water
- Sugars: Granulated & brown
- All purpose flour
- Butter
- Milk
- Confectioners sugar
- Butter flavoring or vanilla extract
- Chopped pecans (optional)

The muffins in these photos were taken right before we went to a friend’s home for a casual Saturday cookout. Moms, dads & the kiddos enjoyed this easy dessert. Okay….maybe we had a few BEFORE supper….LOL!
You can take these ANYWHERE. I keep a box of spice cake mix & a can of pumpkin in my pantry all autumn. These are so fast to whip up before church, too! Eat them alone or pair them with Southern Cheese Grits.…TOUCHDOWN!

Easy Pumpkin Spice Muffins with Streusel & Glaze Toppings
Ingredients
- 1 box spice cake mix
- 1 can pumpkin
- 1/2 cup water
Streusel Topping
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup all purpose flour
- 1/2 cup chopped pecans optional
- 1/4 cup unsalted butter
Glaze Topping
- 3 tbs milk
- 2 cups confectioners sugar
- 1/2 tsp imitation butter flavoring OR vanilla
Instructions
- Heat oven to 350. Spray a mini-muffin pan with non-stick spray OR use muffin liners.
- Mix streusel ingredients together in a small bowl. Set aside.
- In a medium size bowl, mix together the cake mix, pumpkin, and water.
- Spoon batter into the prepared mini-muffin pan. Sprinkle top of batter with streusel mixture.
- While muffins bake, mix up the glaze & set aside.
- The muffins bake quickly; insert a toothpick into a muffin and if it comes out clean they are done. Baking time is dependent on your oven. It averages 8-15 minutes so watch them carefully!
- Remove muffins from pan. Drizzle glaze on top. Repeat process with remaining ingredients.
