Bacon, Beer & Cheddar Dip has all the flavors you want while you are watching the big game…..

The crispy bacon balances the tangy, creamy dip base.
Here’s a secret: I only use freshly grated cheddar for my Bacon, Beer & Cheddar dip. It really is worth the extra effort to shred your cheese because it brings our the depth of flavor from the cheese.
On that note, make sure you incorporate REAL bacon instead of bacon bits. They really don’t work for this recipe but feel free to shake ’em on those salads!
Our family always has packages of pre-shredded cheese in the refrigerator to use when we are in a pinch.
However, we are spoiled with the rich flavor that you can truly only experience with a fresh block of cheese.
We admit it…..we are cheese snobs! And we love dairy. So there ya go!
This dip is served cold, so it is great for those early season football games when it is a gazillion degrees outside. It’s a refreshing change because most beer & cheese dips are served warm. We like both versions equally. Bacon, Beer and Cheddar dip will fit the bill at your next tailgate or home viewing party!
Take It To The Tailgate Tip: Make your dip base the day before the big game and store in a plastic container. Place your shredded cheese and chopped, cooked bacon in two separate Ziploc baggies. The day of the big game, place all three items in the bottom of your cooler. When you arrive at your tailgate, assemble your freshly chilled dip right on site! Scoop out the dip base into a serving container (we used an 8×8 baking dish) then add your toppings.
Bacon, Beer and Cheddar Dip
Ingredients
- 3/4 cup ranch dressing bottled, not the powdered mix
- 2 8oz packages cream cheese
- 2 cups cheddar cheese shredded
- 1/2 cup cold beer (reg or light) (a heavy lager beer does not work well)
- 1 cup bacon cooked and chopped
Instructions
- Mix ranch dressing and cream cheese with an electric mixer until creamy.
- Stir in the beer and 1 1/2 cups of cheese. Mix well.
- Pour into serving dish. Add remaining 1/2 of cheddar cheese and cooked, chopped bacon to the top of the dip.
- Serve cold.
