THE CHEESEBURGER BACON DIP PLAYBOOK
The secret to this dip is sautéing the onions and browning the meat in in bacon grease! Yep, my Southern self LOVES sauteing in bacon grease, and it truly adds depth of flavor to the onions and hamburger. If your family is picky and doesn’t like “chunks” of onions, dice ’em fine and know that they will really soften in that bacon grease! My hubby didn’t even know they were tucked in the dip!

EQUIPMENT FOR CHEESEBURGER BACON DIP:
Slow Cooker: This dip can solidify pretty quickly, and a small slow cooker will keep the dip creamy and dippable during your gathering. Here is the 2 quart slow cooker I use! It is featured in my Bourbon Meatball Recipe. 🙂
Cast Iron Pan: A heavy duty pan is ideal for this dip! You can use any type of pan that you have. If you opt for a cast iron pan, this recipe fits a 6 1/1 inch cast iron skillet. Here is the cast iron skillet I use.
Cheeseburger Bacon Dip
Ingredients
- 1 small Vidalia onion (sweet onion) diced finely
- 1/2 lb ground beef
- 5-7 slices bacon, uncooked
- 8 ounces cream cheese, full fat and room temperature
- 3/4 cup cheddar cheese, shredded
- 3/4 cup Monterrey Jack cheese, shredded
- 1 tsp garlic powder
- 1 Tbsp Worcestershire sauce
- 1/4 cup green onions, chopped/rinsed/dried
Instructions
- Heat oven to 350 degrees. Line two plates with paper towels and set aside. Place bacon slices on a cookie sheet lined with tin foil. Bake bacon until brown and crispy. (Turn once during baking.) Remove bacon and drain on a plate lined with paper towels. Pour 1-2 Tbsp bacon grease into a skillet.
- Place chopped onion in the prepared skillet. Sauté over medium heat until tender and translucent. Add ground beef to the onion/bacon grease mixture in the skillet. Cook until meat is brown and juices run clean. Drain hamburger and onions on the second plate with paper towels.
- In a medium bowl, add cream cheese, 1 cup of shredded cheeses, hamburger mixture, garlic powder, and Worcestershire sauce. Crumble cooled bacon and incorporate into the mixture.
- Pour mixture into a baking pan or cast iron skillet. Bake 12-15 minutes. Remove from oven, stir well. Add remaining cheese on top of dip and return to the oven until the cheese is melted. Remove and top with green onions. Serve with tortilla chips.
